Despite all the sweet treats I’ve been sharing with you, I have been doing well at sticking to eating healthier. My health kick is still going… and I’m in it for the long run! Well, that’s the plan. If you follow me on Pinterest, you may have seen some of the healthier meals I have been pinning. Mainly low calorie meals. So today I thought to share a few of my favorites that I’ve tried so far.
I’ve come across quite a few recipes using cauliflower as a substitute for many things. One of them being as a pizza crust! Cauliflower pizza crust… definitely something that was new to me! I do like cauliflower so I was willing to give this a try without hesitation. The verdict…. I loved it! It looked just like a real pizza crust… and you really can’t taste the cauliflower flavor. Also, it was super easy to make the crust. This was definitely a keeper for me. For my toppings I used chicken and spinach with skim milk mozzarella cheese and Trader Joe’s low fat pizza sauce. Not only am I able to still have pizza as part of my healthy eating diet, but burgers too! Quinoa burgers, that is. I’m a big fan of quinoa, so it was easy for me to salivate over this picture from Eating Well…Living Thin. The reality… they were incredibly yummy! Again, these were easy to make too. I don’t always crave pastas, but when I do this chicken florentine dish would more than fulfill that craving! I LOVED this one! I used brown rice pasta instead of whole grain. I found this recipe over at SkinnyMS HERE.
The last one I want to share is this stir fry dish. When I made it though, since I didn’t have turkey I used chicken instead and whatever veggies I had hand… broccoli, carrots, and celery. I think you can’t go wrong with this one no matter the substitutions. Instead of rice, I ate it with quinoa. Awesome dish! The recipe is from My Recipes and can be found HERE.
All of these dishes are very easy to make. Simple and fast is what I like…. and of course healthy!
